Most of the time it isn't very easy to feed the kids with vegetables but I have found this video with a lovely recipe which is so quick and easy that my husband can also cook and my son LOVES it! I hope you also enjoy it and find other new ideas that can help with this video!
- Cut zucchini at an angle into Â¼-inch (about half a centimetre) slices. Then place them on a baking sheet and expose to direct heat in the oven for 4 minutes, 180 degrees (electric).
- Take them out and top each zucchini slice with marinara sauce (a sauce made from tomatoes, onions, and variety of herbs and garlic, served especially with pasta), mozzarella and toppings of your choice (I used mini pepperoni but you can choose vegetarian toppings like green peppers, sweetcorn or mushrooms). Put it back in the oven for an additional 3 minutes, again at 180 degrees (electric).
- Add dried herbs like oregano or basil on top after it cools down.
- Serve 5 pieces per person with a salad or bread sticks on the side if you want.
