Beans pancake - savoury & mouth watering!

These bean pancakes are very yummy, quick to prepare with fresh ingredients! If your child does not like the taste or smell of boiled or scrambled eggs, this easy to follow recipe with a wonderful taste may help you to feed them eggs!

Serves: 4

Ingredients:

300g baked kidney beans or white beans, drained (about 4½ cups)
1 spring onion, thinly sliced
2 eggs, beaten
¾ teaspoon salt (slightly less or more depends on your preference)
¼ teaspoon garlic powder
¼ teaspoon turmeric (optional)
¼ cup whole wheat flour
¼ teaspoon black pepper
1 tablespoon vegetable oil
Additional vegetable oil for cooking (optional)
1 cup sour cream (optional) 

Instructions:

  1. Place the beans into the bowl and mash them as much as possible.
  2. In another big bowl, mix together the eggs, salt, pepper, garlic, turmeric and vegetable oil.
  3. Add the flour while whisking it all together until you get a smooth texture. Add the mashed beans and sliced spring onion and mix well.
  4. Pre-heat a skillet over high heat. Spread a small amount of vegetable oil over the surface of the skillet.
  5. Take about 2 tablespoons of the mixture and make a flat circle or oval for each pancake.
  6. Turn the heat down and flatten the pancakes with a spatula and cook until it's a dark golden brown colour on both sides and cooked through. Serve immediately while it's warm, topped with applesauce or sour cream.
